Why air isn’t enough
Standard ovens have a lot of “thermal inertia”—basically, they take forever to change temperature. If you’re relying on air to brown your bread, you’re playing a losing game with the timer. Our IR lamps change the math. They don’t bother with the air; they send short-wave radiation straight to the surface of the dough. The best part is how fast they react. The moment the controller kicks in, the filament hits its peak temperature almost instantly. You can blast the surface for 30 to 60 seconds and get that gorgeous color without ruining the crumb. It’s precise.
The gear under the hood
We build these for 220V industrial setups. We use high-purity quartz envelopes because they let the IR light through without blocking it, and they can handle the intense pressure of the halogen cycle without popping. When you’re wiring them up, you can go with parallel or series depending on how you want your heating zones to behave. Just a heads-up: these things pull a lot of power. Make sure your wiring gauge can handle the peak current, or you’ll deal with voltage drops that mess with your heat.
A few things to watch out for
Now, high-intensity IR is powerful stuff. If you aren’t careful, it’s a bit like using a blowtorch. If the lamps are too close to the bread, you’ll scorch the top before the heat even has a chance to settle into the crust. You’ll need to spend some time dialing in the distance and the PWM (pulse-width modulation) to find that sweet spot. Also, remember that those quartz tubes are delicate. If your oven chassis vibrates too much, you’re looking at a premature burnout. Keep things steady, and they’ll treat you right.
